    What to do with Wax Gourd.  A million opinions, some of which are unkind.  Last year was more straight forward because we only had a few, this year we are in the teens.   And this year each one weighs in excess of ten pounds, so we are looking at hundreds of pounds, each ounce of which is beautiful to behold and to my eye perfect in every way.

     I will again bite the Chat Masala bullet, and this time try harder to follow directions.  Then a person in chef's hat suddenly needs Coconut Milk or some other such thing, and I have found that substitution in a recipe can sometimes produce odd reactions from a more objective test subject. Damned if cooking wasn't much easier years ago.  But I do have some bacon to play with.
